Growing & Winemaking
Fruit sourced from the Hillwood vineyard on the Eastern bank of the Tamar River. Managed by veteran grower Geoff Carr, the vineyard was planted in 1991, has an ironstone-gravel soil profile, favoring good drainage and is a low yielder. Tight bunches of dark purple Pinot heaven.
Whole bunch pressed and fermented in steel for primary ferment. Transferred to barrel after primary ferment for full malolactic fermentation in seasoned French oak. Filtered and bottled with minimal sulphur. 130 doz produced.
The cuvée name ‘Serra Serra’ is latin for ‘ridgeline’. The town of Zonza in central Corsica provided the inspiration. Jagged pink granite spires protrude over the Le Maquis Corse. The combination of wild herbs, dried flowers, pine & earth inspired dreamings of a dry-style Rosé to quench the thirst after a long days hike.
Tasting
Pale, dry and super fresh. Wild strawberry, pink grapefruit and blood orange, with Pinot bringing a little red-fruited perfume and texture. Bright, savoury and slightly saline.
