Fiano from the Chalmers vineyard in Merbein, Victoria (close to the township of Mildura). Dating back to ancient Roman times, Fiano was a variety on the lips of the aristocracy. Apiana is a reference to the Latin word for bees, as they were strongly attracted to the sugary pulp of the Fiano grapes. The pristine fruit was hand-harvested and whole bunch pressed to stainless steel for wild fermentation. Cold stabilised for clarity and steel - 70ppm total sulphur addition - 50 cases produced (not much)
